Allvar Gullstrand (d. 5 Haziran 1862, Landskrona - ö. 28 Temmuz 1930, Stockholm), İsveçli göz doktorudur.
Gullstrand, Uppsala Üniversitesi'nde (1894-1927) göz terapisi ve optik profesörlüğü yaptı. Optik görüntüler ve gözün ışık kırınımı çalışmalarında fiziksel ve matematik yöntemleri kullandı. Bu çalışmalarından dolayı 1911 yılında Nobel Fizyoloji veya Tıp Ödülü aldı.
Gullstrand ayrıca astigmatizm üzerine yaptığı araştırmalar, oftalmoskop gelişimi ve katarakt ameliyatlarından sonra kullanılan düzeltici lenslerle ilgili yaptığı çalışmalarla da bilinir.
