Lactobacillus helveticus, Lactobacillus cinsine ait, laktik asit üreten, çubuk şeklinde bir bakteridir.
Çedar, Parmesan, Romano, provolon ve mozzarella gibi diğer peynir türlerinin yapımında kullanılır. L. helveticus kültürünün temel işlevi, son peynirde acıyı önlemek ve fındıksı tatlar üretmektir.
Emmental peyniri üretiminde L. helveticus, karbondioksit gazı üretimi yoluyla deliklerin («gözler» olarak bilinir) geliştirilmesinden sorumlu olan Propionibacterium kültürüyle birlikte kullanılır.
