Higher-fat liquids, like heavy cream, are also more resistant to curdling, so when heavy cream is heated it stays smooth.
Heavycream (also called heavy whipping cream) must contain at least 36% milkfat. It must be pasteurized or ultra-pasteurized to kill harmful bacteria.
